Green Tea CupCakes
Green Tea Cupcakes (makes 16)
Cupcake Base
Cake Flour ------------------------------------------- 100 g
Baking Powder --------------------------------------- 1 teaspoon
Salt -------------------------------------------------- a little bit
Matcha Powder -------------------------------------- 2 teaspoon
Large Egg (seperated) -------------------------------- 3 pcs
Sugar (divided it into 2 equal parts)-------------------- 100 g
Vegetable Oil ----------------------------------------- 50 ml
Water ------------------------------------------------ 60 ml
Pure Vanilla Extract ---------------------------------- 1/2 teaspoon
1. Preheat oven to 350 F
2. Sift Flour, baking powder, salt. In another bowl, whisk matcha powder with water
3. Whisk egg yolks and HALF of the sugar, beat it with medium speed until pale and yellowish
4. Slowly add in the oil, vanilla extract and matcha mixture
5. In another bowl, beat the egg whites until frothy, gradually add sugar. Beat until firm peaks.
6. Gently fold the egg whites into the batter
7. Grease the muffin pan, and pour mixture into the pan with an ice-cream scoop, bake for around 30-40 mins.
Icing
35 % cream --------------------------------------25o ml
sugar --------------------------------------------- 50 g
1. Beat the cream with medium speed, add in sugar when u see the bubbles appear.
Assembling
1. Fully cool the cake base before u pipe the icing on!!!
